I love cookies.
Like seriously, they are so mouthwateringly addicting that I could never just give them up.
But, cookies and paleo just don't really mix all that well.
And regular cookies make me feel far too terribly (and guilty!) to eat them as often as I want to.
Well, that was until these little buggers.
Since going paleo, I have semi-avoided coconut flour. I always seem to have a bag in my cabinet, but that's because I tend to turn to any other type of flour first. Coconut flour is like a sponge, soaking every bit of moisture up, so you use much less than you would another type of flour.
It also has a coconut taste (obviously!) so I'm not a fan of adding it to dishes meant to be savory.
These cookies may be a lot of things, but savory they are not!
Without further delay, I present to you the best coconut flour, paleo, chocolate chip cookie to come out of your very own oven!
1/2 c. coconut flour
1/2 c. coconut sugar
1/3 c. coconut oil, melted
1 tsp vanilla
1/2 tsp. baking soda
1/3 c. dairy free chocolate chips (I used these)
As always, preheat your oven first. This time to 350F. So, you want to start by adding all your dry ingredients together. My coconut sugar tends to want to stick together, so I like to break up the clumps first. Once everything is mixed together, add in your eggs, coconut oil (be careful, if it's too hot, it will begin to cook your eggs and you do NOT want that), vanilla, and chocolate chips.
Mix until everything starts to stick together, and then gently work in your hands so the dough holds. The dough that forms won't be like a regular cookie dough. It's a little thinner, so don't be alarmed!
Your cookies aren't going to spread much, if at all, so go ahead and make them the size and shape you want them to be. Bake on a greased cookie sheet for about 12 minutes.
After they come out of the oven, let them set for about 10 minutes, and then enjoy one of the best cookies you'll ever bite into!
