There was quite a bit of thought that went into little A's birthday cake. He's still very leery of solids and eats only a few bites a day, so it didn't really need to be anything too extravagant. I did have very specific requirements for the cake. It had to be paleo. With big A's dietary restrictions, paleo tends to be the best choice for our family.
When searching for paleo cakes though, I came across one issue. They were very, very egg heavy. Little A has had several reactions to eggs now, so we've been steering clear of them. For one or two eggs, I typically like to substitute with flax eggs, but that's almost impossible when you get to a recipe that calls for 3-4 eggs.
I knew little A wasn't big into solids, so I decided to make these into cupcakes so we could all enjoy them. While he seemed to prefer the candle,
big A and I have been enjoying them for breakfast!
4 bananas, mashed
1/2 cup coconut flour
1/4 cup coconut sugar or honey
1/4 cup almond butter
Mix all the ingredients together in a bowl, and then pour into muffin tin. These muffins won't rise, so I filled them all the way to the top. Bake at 350F for about 30 minutes, and enjoy!
